Hylians aren’t elves, no. They’re a type of humans, I think. Their ears even look different than that of the elves I’ve seen in pictures. Elves’ ears are more rounded with pointy ends while Hylians have triangular ears.

Why is Link hair pink?
User Snarwin claims the pink hair is a result of the Dark World turning Link into a bunny, and thus there wasn’t room in Link’s limited, 16-bit color palette for his traditional hair color with the bunny pink taking up a slot. In the Downfall Timeline, the Kokiri Forest was probably destroyed by Ganon. In the adult timeline, the Deku Sprout grew up and the Kokiri became Koroks. But in the Child Timeline, the Deku Tree is dead, there is no Deku Sprout, and the Kokiri have all disappeared

Why does Link always look the same?
Although WW Link is of no relation to the Hero of Time (Or so the King says) It is shown in, I think at least two games, that all the Links are descendants of the Hylian knights, all of the same bloodline. Thus their similar appearance makes sense.
